Classic Irish Dish Vegan Shepherd's Pie Recipe by Earthy Cookhouse
Let's make a plant-based version of a classic Irish dish - the Shepherd's Pie!
For the filling you'll need:
1 tbsp Borges cooking olive oil
Finely diced onions, carrot, and celery
Sea salt
Soy mince
Tomato paste
Tomato Ketchup
Boiling water
Veggie stock cube
100 ml Red wine
Borges Balsamic Vinegar
Soy sauce
4 sprigs thyme
Frozen peas
Cornstarch
Ground black pepper
Salt
1 tbsp butter
Vegan cheese shreds
For the mashed potato you'll need:
1 kg potatoes Borges Rice & Almond drink
Vegan butter
Vegan cheese
To make the topping:
Step 1. Boil potatoes for 15 mins.
Step 2. While the potatoes are boiling, soak the soy mince in water
Step 3. Once the potatoes are cooled, peel and chop the potatoes and add to a large mixing bowl.
Step 4. In a pan add the Borges Natura Rice & Almond Drink, Vegan cheese and vegan butter and heat it
Step 5. Now, take this thick sauce and pour it onto the cooled potatoes.
Step 6. Take your masher and start mashing!
Step 7. Once done, season it with salt and pepper.
To make the filling:
Step 8. In a large pan heat Borges olive oil
Step 9. Once the oil is hot, add the diced carrot, celery, and onion and sweat them with a pinch of salt.
Step 10. Cook on a low heat.
Step 11. While the veggies are sauteeing, whisk together the tomato puree, ketchup, boiling water, vegetable stock cube, red wine, balsamic vinegar soy sauce and chopped thyme leaves.
Step 12. Add this to the pan, increase the heat until it starts boiling. Reduce the heat and cover.
Step 13. Add the soy mince to the pan that has the sauce.
Step 14. Let the sauce simmer for 15 mins
Step 15. Add the frozen peas and cornstarch slurry to the sauce
Step 16. Taste and adjust the seasoning accordingly
To assemble:
Step 17. Transfer the sauce to a 9 inch baking dish
Step 18. Use a spatula to spread the potato mash evenly
Step 19. Use a fork to create a wavy pattern
Step 20. Melt 1 tbsp butter and brush it over the potatoes
Step 21. Bake in the oven for 25-30 mins at 170°C
Step 22. Serve warm!
