How to Cook with Plant-based Meat? Here are 3 Easy Recipes to Guide You.

Plant-based meats have come a long way from being scoffed at to being a conscious choice that people are making every day. Over time, the availability and appeal of cruelty-free, vegan meat analogues has increased manifold and continues to be so amongst rising awareness about animal cruelty and its detrimental impact on the environment.
Plant-based meat alternatives are now available in several variants which are flavoured and ready to cook for amateurs as well as experienced cooks. 1. Vegan Grilled Chicken Panini
Ingredients:
1 Pack of Greenbird Plant-based Chicken-like Nuggets
1 cup sliced onion rings
1 Cup of fresh Basil Leaves
1 Cup of sauteed mushrooms
1 Cup of tomato rings
1 Cup of fresh crunchy lettuce
3 Tbsp Oil / Vegan butter
Vegan Mayonnaise
Mustard sauce
1 Panini loaf
Pro tip: Garlic or Multigrain loaf is recommended
Method:
Step 1. Preheat oil in a pan and sear the Greenbird Plant-based Chicken-like Nuggets on both sides until golden. Set it aside.
Step 2. Thinly slice onions, tomatoes, bell peppers, and dice the carrot and capsicum.
Step 3. Toast the panini on a pan with vegan butter.
Step 4. Lather vegan mayonnaise on the toasted bread and top it with mustard sauce.
Step 5. Now top your chopped veggies, place the cooked chicken nuggets and lettuce leaves on top.
Step 6. Gently but firmly press the panini down while grilling it on a pan.
Step 7. Serve with fries or a dip!
2. Vegan Thai Curry with Greenbird Plant-based Chicken-like Sausages
Ingredients:
1 pack of Greenbird Plant-based Chicken-like Sausages
1 tablespoon oil
1 onion, finely chopped
3 cloves garlic, minced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 cup broccoli florets
4-5 baby corn, diced
1 can of coconut milk
2 tablespoons green Thai curry paste
1 Cup kaffir Lime leaves and lemon zest
1 tablespoon freshly squeezed lime juice
Fresh basil leaves
Cooked rice or noodles, for serving
For the Thai Curry Paste: grind the following into a paste
1 cup Lemongrass
Green Chili and ginger 3 tbsp each finely chopped
Basil leaves loosely chopped
Garlic ½ cup minced
Lemon zest and lime juice of 1 whole lemon
Salt per taste
Coriander + Cumin powder
½ cup loosely chopped shallots or onions
Method:
Step 1. Heat the oil in a large skillet or wok over medium heat. Add the chopped onion and garlic. Sauté until fragrant and translucent.
Step 2. Add the sliced bell peppers and broccoli florets to the skillet. Stir-fry for a few minutes until they begin to soften.
Step 3. In a bowl, mix the coconut milk, green curry paste, and lemon zest. Pour this mixture into the skillet with the vegetables.
Step 4. Add the diced Greenbird Chicken-like Sausages to the skillet and stir well to combine with the curry sauce.
Step 5. Add warm water to reach your desired consistency for the curry. Simmer for 10-15 minutes or until the vegetables are cooked to your liking and the flavours have melded together.
Step 6. Just before serving, squeeze in the lime juice for a fresh kick. Taste and adjust the seasoning if needed.
Step 7. Serve the vegan Thai Curry with sausages over cooked rice or noodles. Garnish with chopped fresh basil leaves.
3. Vegan Seekh Kebab Pulav with Greenbird Plant-based Chicken-like Seekh Kebabs
Ingredients:
1 Pack Greenbird Plant-based Chicken-like Seekh Kebab
For the Pulav:
2 cups basmati rice, soaked for 30 minutes and drained
1 large onion, thinly sliced
1 cup mixed vegetables (peas, carrots, bell peppers, etc.)
1 tablespoon ginger-garlic paste
1 teaspoon cumin seeds
A handful of chopped coriander
Salt to taste
Oil for cooking
Whole spices (1 bay leaf, 2-3 cloves, 2-3 green cardamom pods, 1-inch cinnamon stick)
Instructions:
Step 1. Prepare the Greenbird Plant-based Chicken-like Seekh Kebabs on a pan until cooked through. Chop them into chunks and set aside.
Step 2. Make the masala - in a large pot, heat some oil. Add the cumin seeds and whole spices. Let them splutter.
Step 3. Add the sliced onions and saute it until golden brown.
Step 4. It’s time to add your chopped veggies like carrots, beans, bell peppers, and peas!
Step 5. Mix a bowl of cooked rice with this masala by stirring well.
Step 6. Top it with a handful of saffron-stained rice to make your pulav look even more appetising.
Step 7. Now place the seekh kebab chunks on top, garnish with crispy fried onions, and cook for another minute or two.
