Michelin Star Restaurant Eleven Madison Park's Waitlist Surpasses 15,000 After Launching Vegan Menu

The New York-based 3 Michelin Star restaurant, Madison Park, recently announced that it will be turning its food menu completely vegan due to the Covid-19 pandemic. The restaurant reopened on June 10 with a 100% plant-based menu and has since attracted a waiting list of more than 15,000 people which extends into July.

The decision to ditch animal products from the menu was taken by Chef Daniel Humm. He explained his decision in a blog post, writing:

 

“It’s time to redefine luxury as an experience that serves a higher purpose and maintains a genuine connection to the community. A restaurant experience is about more than what’s on the plate. We’re thrilled to share the incredible possibilities of plant-based cuisine while deepening our connection to our homes; both our city and our planet.”

 

According to Humm, the Eleven Madison Park will be recreating its popular menu items using ingredients such as legumes, grains, vegetables and fungi without compromising on the taste and quality of the dishes.

Humm previously emphasized on the unsustainability of the current food system, and took the decision to go plant-based with respect to various factors. The positive response to this change in menu is encouraging for the plant-based movement and will push more popular eateries to embrace this change.
