Mumbai-Based Start-Up Presents World’s First Plant-Based Boiled Egg That Tastes Like Chicken Eggs
Whether or not you are a foodie, you’re probably aware of the fact that eggs are one of the most frequently consumed animal-based foods in the country. They are widely eaten across cultures and geographical regions in India, so it is about time that the brilliant minds of today devised a great egg substitute that was plant-based so it could cater to vegans. Well, that is exactly the idea that struck Kartik Dixit who was deeply concerned about animal welfare and the desire to combat climate change. So, when he met Shraddha Bhansali, the owner of a vegan restaurant in Mumbai called Candy & Green, the two founded Evo Foods.
The start-up came into being in August 2019 and since its inception, the Mumbai-based company has been making strides in the plant-based food space in India. In a short amount of time, the power duo devised a plant-based boiled egg that came close to chicken eggs when it comes to flavour, texture and chemistry. Moreover, the cherry on the cake is that it is a close substitute to its nutrient profile as well.
How the plant-based boiled egg was developed
“What I really wanted was to change people’s perspective of food,” Shraddha says. “And I realised that the best way to reach the maximum number of people was through something like Evo. Our goal is to create high-quality, affordable protein sources for the world,” she explains.
“We take Indian legumes, extract proteins from it and use these proteins that are completely plant-based to make our product,” says Kartik. “It’s essentially like software development. We are continuously iterating on the product. Our focus is fully on eggs, even in the near future. It’s a $200 billion market worldwide, so there’s enough space to make amazing egg products and improve them.”
Intriguing facets of these plant-based boiled eggs
The product is essentially a liquid egg replacer that looks like matter you whip up after beating an egg. Each of the raw ingredients that comprise the egg mixture are native to India. EVO Foods created the first vegan egg in the country to be completely cholesterol-free. Moreover, it is antibiotic-free and of a similar quality as farm-range eggs.
It has a myriad of uses
These plant-based boiled eggs do not restrict your cooking in any manner. The core ingredient is a liquid egg substitute devised by the start-up that is both efficient and convenient. So, it can suit recipes like scrambled eggs, omelets, or even egg rolls. One of the most interesting facets is that the price point at which they are offered makes them comparable to poultry eggs or farm-range eggs sold in India.
The environmental benefits
The most attractive fact is the environmental benefits it proffers. As animal farming results in nearly 18 percent of greenhouse gas emissions, it is a big contributing element to global warming. That being said, a transition to plant-based boiled eggs could make a vastly positive impact on climate change. Plant-based boiled eggs greatly reduce the environmental footprint in a way that is cruelty-free without making consumers compromise with the taste or nutrition.
