Quick and Easy Vegan Kulfi Recipe in 15 Minutes | Delicious Dairy-Free Dessert by Earthy Cookhouse

Earthy Cookhouse Episode #3

This Kulfi recipe is one of the easiest vegan dessert recipes and comes together in just 15 minutes. Tastes best with Borges Natura Rice and Almond Drink.

 

You’ll need:

 

1 cup oat condensed milk or full fat coconut milk

2 cups Borges Natura Rice and Almond Drink

5-6 cardamom pods (shelled and crushed) or ½ tsp cardamom powder

5-6 saffron strands

25 almonds 

1 tbsp pista

1 tbsp cornstarch 

Kulfi moulds

 

Cooking instructions:

 

Step 1. Mix 1 cup condensed milk with 1 cup almond milk in a pan. Bring these two to a boil and keep stirring.

Step 2. Use a mortar and pestle to crush the green cardamom pods in a fine powder like this. 

Step 3. Add crushed cardamom powder along with 5-6 strands of saffron to the mixture in the pan. Continue to stir over high heat.

Step 4. Once the mixture starts to boil, reduce the heat and let it simmer for 10-12 minutes until some of the milk gets evaporated.

Step 5. Make a coarse powder of the almonds and pistas using the mortar and pestle.

Step 6. In a small bowl mix cornstarch with 1 cup of Borges Rice & Almond drink to make a slurry. 

Step 7. Add this to the pan and simmer for a few mins. 

Step 8. Boil the milk for a few minutes to take away the starchy flavour. Keep stirring to make sure the cornstarch doesn't stick to the bottom of the pan.

Step 9. Once the cornstarch is cooked, add the crushed nuts and turn off the heat.

Step 10. Pour the milk into the kulfi moulds

Step 11. Freeze for at least 6 hours or overnight.
