Method:

Step 1. Heat olive oil in a skillet over medium heat. Cook the nuggets on each side for about 3-4 minutes until golden brown.

Step 2. Sautee chopped button mushrooms with a handful of basil leaves and set it aside.

Step 3. Prepare your veggies by slicing onion, tomato, and lettuce leaves.

1 pack of Greenbird Plant-based Chicken-like Seekh Kebabs
Salt to taste (optional)
Oil for cooking

For assembling the kathi rolls:

Vegan tortillas/ Malabar Parothas/ Roomali Rotis
Sliced onions, beetroots, and lettuce (or your preferred salad greens)

Method:

Step 1. Preheat the pan to cook the seekh kebabs, until they are cooked and slightly charred.

Step 2. While the kebabs are cooking, prepare your kathi roll fillings. Slice the onions, beetroots, and lettuce, and gather your preferred sauces or condiments.

Step 3. Once the kebabs are done, carefully remove them from the skewers.

Step 4. Warm the vegan tortillas or flatbreads on a skillet or quick heat in your microwave.

Step 5. To assemble the kathi rolls, place a warmed tortilla on a plate, spread some vegan chipotle or sauce of your choice on it, add a few slices of onions, beetroots, and lettuce, place a couple of kebabs in the centre, and optionally add any extra condiments.

Step 6. Roll the tortilla tightly to form a wrap. You can secure it with a parchment paper or foil to keep it intact while serving.

Method:

1 pack of Greenbird Plant-based Mutton-like Keema
1 and half cup of basmati rice
4 cups water
1 onion, thinly sliced
2 tomatoes, chopped
2 cloves of garlic, minced
1-inch piece of ginger, minced
1/2 cup frozen peas
2 tablespoons vegetable oil
1/2 teaspoon cumin seeds
2 green cardamom pods

2 cloves
1 cinnamon stick

1 bay leaf

1/2 teaspoon saffron threads, soaked

1/4 cup fresh cilantro, chopped

1/4 cup fresh mint leaves, chopped

Salt to taste

Instructions:

Step 1. Prepare by heating the vegetable oil in a pan. Add the Greenbird plant-based mutton-like keema in your cooking pot.

Step 2. Cook for a few minutes until well-coated, mashable and set it aside.

Step 3. Rinse the basmati rice under cold water until the water runs clear. Drain the rice and set aside. 

Step 4. In a large pot, heat 2 tablespoons of vegetable oil over medium heat. Add the cumin seeds, cardamom pods, cloves, cinnamon, and bay leaf. Sauté for a minute or until aromatic.

Step 5. Add the sliced onions and sauté until they turn golden brown.

Step 6. Stir in the minced garlic and ginger and cook for another 2 minutes.

Step 7. Add the chopped tomatoes and cook until they become soft and the oil begins to separate.

Step 8. Add the drained rice and mix well. Then, add 4 cups of water and salt to taste. Bring to a boil, reduce the heat to low, cover, and let it simmer for 15-20 minutes or until the rice is cooked.

Step 9. Layer the plant-based keema, peas, saffron water (optional), chopped cilantro, and mint leaves on top of the cooked rice.

Step 10. Cover the pot with a tight-fitting lid and let it simmer on low heat for an additional 10-15 minutes to allow the flavours to meld.

Step 11. Fluff the rice gently with a fork before serving.
