Vegan Egg Replacers For All Occasions!
So the internet has fallen in love with an egg, a plain and simple egg, dethroning reality TV star Kylie Jenner for the most-liked Instagram post of all time. We’re saying, let’s look beyond eggs! We know vegans are always on the lookout for egg replacers, so we made a handy guide with egg substitutes for all occasions.
Eggs can do several things: they can add moisture to a dish, act as a leavener (add air), or act as a binding agent, and, depending on what you need, you can use different ingredients while cooking.

Replacing Eggs In Pudding & Chewy Desserts
Eggs help bind ingredients (like cookie dough and cake batter), and also help set puddings and other gelatinous desserts. You can replace eggs with flax seeds or chia seeds – when mixed with water, they mimic the structure of eggs, binding all the wet and dry ingredients. Peanut butter also works as a binder for cookies and loaf cakes. Instead of 1 egg, use:
- 1 tbsp ground flax seeds + 3 tbsp water (mix until well combined and gelatinous)
- 1 tbsp chia seeds + 3 tbsp water (allow it to sit for 15 min so it thickens)
- 1 tbsp agar agar flakes + 3 tbsp water (agar agar can also be used as a substitute for gelatin)
- 1 tbsp soy protein powder + 3 tbsp water (combine till you get an egg-like consistency)
- 3 tbsp organic peanut butter

Replacing Eggs In Fluffy Pancakes & Waffles
Eggs are also leaveners. The job of a leavener is to add air to a batter so that your baked goods rise. They give cakes and breads that fluffy texture they are famous for. But fear not! These easy egg replacers will achieve the same result. Substitute each egg with any of the following:
- 2 tsp baking soda + 2 tbsp warm water
- 2 tsp baking soda + 2 tbsp warm water + ½ tsp oil
- 1 tsp baking powder + 1 tsp vinegar

Replacing Eggs In Moist Cakes
Eggs also add moisture and prevent baked goodies from drying out. You can achieve the same results with mashed banana, applesauce, boiled pumpkin puree or pureed silken tofu. Replace 1 egg with:
- ½ cup ripe banana, mashed
- ¼ cup applesauce, unsweetened (Make your own applesauce! Core, peel and chop apples. Cook with water until till soft, then strain the apple pieces and puree until you get a smooth mixture.)
- ¼ cup silken tofu (Pureed tofu can also be used to replace eggs in custard, quiches and pies.)

Replacing Egg Whites
Wherever you need egg whites, use aquafaba – the liquid that remains after boiling white chickpeas! Use it to make meringues and cooked vegan icing for cakes and cupcakes.
Replacing Eggs For Breakfast
