Vegan Spaghetti Bolognese Recipe with Cashew Parmesan by Earthy Cookhouse
Let's make a Vegan Spaghetti Bolognese with cashew parmesan!
A bolognese is typically a meat based sauce that originated in Italy and people love to eat it with spaghetti and lots of cheese. This recipe uses Borges spaghetti pasta which is made from 100% durum wheat and is a great source of protein and fibre.
You'll need:
For the pasta -
Borges Spaghetti Pasta
2 tbsp Salt
Water
For the sauce -
1 ½ tablespoons Borges olive oil
3 onion, 2 celery and 1 carrot finely diced
8-10 garlic cloves, minced
1 teaspoon dried oregano
1 tbsp fresh thyme
1 ½ tsp salt
1 bayleaf
1 tbsp nutritional yeast
Freshly ground black pepper to taste
1 tbsp tomato paste
1/2 cup dry red wine
2 vegetable stock cubes with 3 cups water
1/2 cup whole masoor dal soaked overnight or 8 hours
3/4 cup walnuts crushed finely
300 g Tomato paste
Flat-leaf Italian parsley or fresh basil, chopped or slivered (optional)
For the Cashew Parmesan -
3/4 cup raw cashews
3 Tbsp nutritional yeast
3/4 tsp sea salt
1/4 tsp garlic powder
Cooking instructions:
Step 1. In a pan, heat Borges cooking olive oil.
Step 2. Add the diced Onion carrot celery with a pinch of salt.
Step 3. Add garlic, 1 tbsp fresh thyme, 1 tsp oregano and stir
Step 4. Add 1 tbsp tomato paste and cook until the paste is dark red.
Step 5. To this, add 1/2 cup red wine and cook for 1-2 minutes
Step 6. Add veggie broth, the lentils, walnuts, nutritional yeast, passata sauce and bayleaf and stir to incorporate well.
Step 7. Heat until the mixture comes to a boil, then reduce the heat to medium-low.
Step 8. Cook until the lentils are al dente.
Step 9. Now add fresh parsley and mix in.
Step 10. While the lentils are cooking,
Step 11. Take a large pot and add boiling water with 2 tsp salt.
Step 12. Once boiling add the Borges Spaghetti and cook for 10 mins.
Step 13. In a food processor add dry cashews, nutritional yeast - also called nooch, garlic powder and salt.
Step 14. Blend until you have a coarse mixture.
Plating Instructions:
In a dish serve the pasta
Top it with a generous serving of the Vegan Bolognese Sauce
Sprinkle cashew parmesan and it's ready!
