MOD Santorini has been a family-owned hotel operating in Santorini since the 1970s. However, the hotel was shut for a decade somewhere in between until the owners transferred it to their son. Anargyros (Argiris) Fousteris and his Australian Greek partner Christina Boutrou have now transformed the MOD Santorini into an eco-friendly vegan paradise.

THE VEGAN TRANSFORMATION

Christina Boutrou made the switch to a vegan lifestyle in 2019 when she moved from Australia in 2019. Argiris was already in the midst of renovating the hotel to create something that represented his heritage. During the pandemic, they started cooking more and more vegan food and became passionate about the cause.

While Greece has a lot of traditional dishes that are vegan or can be veganised, the couple realised that traveling as vegans may have its drawbacks in Greece. They were clear in their decision to make the hotel a fully vegan one since it was the lifestyle they identified with.

“Having a vegan hotel is about all aspects, the animals, the food, the environment, to be conscious of every decision we make. We just knew there would be likeminded humans who share the same passions as we do, and for us owning a hotel is more than just a hospitality service, it is a joy we get to share with our community every day”, says Arigiris

Argiris and Christina have pored over every detail of the hotel to make sure it lines up with their sustainable aims. Right from the material used for construction to the bed linen, cleaning products and the wine list, they have made sure everything is vegan.

“To me, having a vegan hotel is being holistic in the approach of an overall wellness experience by assisting travellers to be nourished while staying with us, mind, body and soul. Being healthy while travelling to me is important and I am aware it is not always easily accessible. To provide great vegan food to our guests is important. This is why we decided to offer a complimentary plant-based breakfast daily to all our guests, allowing them to fuel-up before exploring the island,” says Christina.

A WELL-ROUNDED EXPERIENCE

The hotel offers a complimentary vegan breakfast as part of the stay which includes fresh orange juice, chickpea flour omelettes, and a house-made jam with fresh breads. They also serve vegan waffles with berries, hazelnut chocolate pancakes and a traditional Greek spanakopita, burgers, Buddha bowls, wraps. Their beverage menu includes coffees, juices, and vegan wines and cocktails.

The owners have also curated a list of nature-friendly activities guests can embark on when they visit. These include vegan wine tastings, vegan cooking classes, hiking, snorkeling, a vegan sunset picnic, and yoga and meditation sessions.

Argiris and Christina have also ensured that the hotel is as low-waste as possible in keeping with their responsible, sustainable and earth-friendly ethos.

MOD Santorini has gone the extra mile to ensure that travelers have a sustainable and luxurious holiday. With more and more conscious travelers, hotels and tourist attractions must take the leap of faith to preserve what we have left on this planet.
