Meron has recently released Wondergel which is India’s one and only spreadable Agar Agar. Agar Agar is a commonly used plant-based alternative for Gelatin. While Gelatin is an animal-derivative made from the bones, skin, cartilage or tendons of animals, Agar Agar is derived from red algae, a seaweed. It is also known as China grass and Japanese Gelatin.

Wondergel: Meron's Spreadable Agar Agar

The spreadable Agar Agar Wondergel by Meron is a unique functional ingredient which is obtained by transforming the rigid structure of native Agar Agar with no chemical treatment, while at the same time retaining the natural benefits of the seaweed fibre. Unlike general Agar Agar, Wondergel is spreadable, which adds a smooth and delicate consistency to food.

This product is a gem when it comes to vegan cooking. It provides a silky and creamy texture to food and is much more versatile than Gelatin. Here is why it is a must have in all kitchens:

  • Agar Agar is vegan and gluten-free.

Unlike Gelatin, Agar Agar is derived from seaweed, is high in fibre, and free of starch, soy, corn, yeast, wheat and preservatives.

  • Agar Agar can replace gelatin in a number of ways.

It can be used in soft desserts like jellies, gummy candies, cheesecakes, custards, panna cotta, souffle, mousses, puddings, flavoured milk and many more. It has a great synergy with sugar, sets faster than gelatin and remains firm for longer.

  • The spreadable Agar Agar has a wider range of uses beyond desserts.

It gives a soft, delicate and creamy texture to spreadable cheeses, jams and marshmallows, and can be used as a binding agent in beverages like smoothies.

  • Spreadable Agar Agar is an essential for advanced baking.

Only available at Meron, the spreadable Agar Agar Wondergel gives a shiny and glossy look to cake glazes, can be used in fondants and as a piping gel in decorative cakes.

  • It also works as a thickening agent.

Wondergel can be used to thicken curries and soups and is a much healthier alternative to cornflour or maida.

Meron’s Wondergel has a smooth consistency and is available in three different forms depending on what you're cooking:

1. Wondergel 30

This has a lighter and smoother texture and is preferably used as a stabilizing and binding agent for beverages and other dishes with a flowy consistency like custards, sauces, dips and yoghurts.

2. Wondergel 50

This is a bit denser than Wondergel 30 and is ideal for soft and fluffy desserts like cake glazes, panna cottas, mousses, pie fillings and puddings. It provides effective binding and a creamy light consistency and flavour.

3. Wondergel 200
