Ingredients
1 Medium Sized Sweet Potato
2 Slightly Over-Ripe Bananas
3 Cups Non-Dairy Milk
3 Tablespoons Chia Seeds
As a future dog-mom, I am constantly on the lookout for healthy plant-based recipes to give to our canine friends. Full of fibers, beneficial nutrients and anti-oxidants, sweet potatoes are really good for dogs--and the fur-babies simply love the taste! After making a batch of sweet potato and lentils parathas for the dogs, I still had a single cooked sweet potato left. So made it into a smoothie for me.
Mildly sweet, creamy, and delicately flavoured, this root-veggie works wonders as a smoothie when blended with bananas and a nut-milk. The addition of chia seeds boosts the nutrition quotient making it ideal for a quick and nourishing breakfast.
Method:
1. Pressure cook the sweet potato for up to three whistles. Cool and peel. Alternatively you can steam it until tender.
2. Blend the cooked sweet potato, bananas and non-dairy milk until thick and creamy.
3. Stir in the chia seeds.
4. Refrigerate for at least 20-30 minutes before serving.
It forms a 'chocolatey' layer on top when refrigerated. Tried swirling it, albeit unsuccessfully! This smoothie is chock-full of dietary fibres, minerals, vitamins and anti-oxidants which make it an ideal breakfast to grab in the mornings or a quick ‘n nourishing evening snack.
