Banana Cinnamon Roll French Toast

Ingredients
For The Batter
2 large bananas
1/4 cup flour (I used oat flour, you can use any flour you like)
1tsbp flax seed meal
1/2 cup plant milk of choice (I used almond)
2 tsp cinnamon powder (optional)
2 tbsp syrup (maple, agave, or jaggery - this is optional, for sweetness)
1/4 tsp kala namak (for egg taste - optional)
As many slices of bread as you want!
For The Cinnamon Sugar
2 tbsp any kind of sugar
1/4 tsp cinnamon powder (or more to taste)
For The Cinnamon Roll Icing
3 tbsp icing sugar
1/2 tbsp plant milk of choice
Today I would like to share with you all my two favourite foods combined into one: banana french toast and cinnamon rolls! And yes, it's vegan. This would be the perfect breakfast to make on a lazy Sunday.
Method
- Mash the bananas to cream them, then whisk them along with all the other ingredients, or use a blender to mix it together.
- Dip your bread into the batter on both sides and gently lift it with a spatula so it doesn’t tear and place it on a hot non-stick pan that has been lightly brushed with cooking oil.
- Cook on each side for 1-2 minutes or until its browned and crispy.
- Take off pan and sprinkle with cinnamon and sugar mixture and top with the icing.
Bonus- Healthier Icing Option!
Take 4 tbsp soaked cashews, 3 tbsp plant milk of choice and 2-3 tbsp sweetener of choice or dates. Blend these together and top your French toast!
