Soak the pumpkin seeds overnight, blend with kala namak/pink salt (needed for the eggy flavour, such a surprise ingredient!), turmeric (antiseptic + colour), garlic powder and water till you get the right consistency.
If you want it to hold its shape well, be generous with the oil/vegan butter as we were but if you'd like to skip, you can always scramble or cook on low for longer.
