Mango Filled Thumbprint Cookies

Ingredients
All purpose flour - 1 cup
Coconut oil - 1/3 cup
Sugar - 1/3 cup + 2 tbsp
Vanilla extract - 1/2 tsp
Fresh mango - 1/2 cup
Water - 1 tsp
Directions
- Preheat oven to 180 C.
- Blend together mangoes and 2 tablespoons sugar to a smooth paste.
- Cream the coconut oil and remaining 1/3 cup sugar into a smooth, light and fluffy mixture.
- Add 1 1/2 tablespoons of the prepared mango paste, along with the vanilla and 1 tsp water, to the coconut oil-sugar mixture.
- Incorporate the flour into the sugar mixture and form a soft dough.
- To make the cookies, take small portions of the dough and shape them into balls. Flatten the dough by pressing between your palms and use your thumb to make a dent in the centre of the cookie dough.
- Fill roughly 1/4 teaspoon mango paste in the centre of the cookie.
- Line a cookie sheet with parchment paper.
- Place cookies on the lined cookie sheet and bake at 180 C for 15-20 minutes, depending on your oven size.
- Place baked cookies on a cooling rack and allow them to cool and crisp up.
