Whole-Wheat Tea Cake With Coconut Oil

Ingredients
1 Cup Whole Wheat Flour
1 cup Corn Flour
2- 3 Bananas
2-3 Carrots
1/2 cup Coconut Oil
1 cup Nuts and Dry Rruits mixed
S2 tsp Baking soda
1 tsp Cinnamon
1 tsp ginger powder
1 tsp vanilla extract
Method:
1. Preheat oven to 180°C. Line a pan with parchment paper.
2. Mix all dry ingredients in a large mixing bowl: whole-wheat flour, corn flour,
baking soda, cinnamon and ginger powder.
3. Peel bananas and carrots. Grate carrots finely, using the side of the box grater that has the smallest holes. Mash or grate bananas using the other side of the grater with bigger holes or use a fork to mash.
4. Combine grated bananas and carrots in a big mixing bowl, add nuts, dried fruits, olive oil and vanilla extract. Gently stir with a spoon.
5. Add the flour mixture to the banana/carrot mixture and stir carefully.
5. Spoon the batter into the prepared pan. Smooth the surface. Bake it for 40-50 minutes. Turn off the oven, open it and cool the cake inside for 15 minutes.
